As you explained pin 1 and 3 will be used for serial data, so D5 to D12 the LCD parallel data pins will be left floating or should be grounded to avoid interference ?

The LCD logic is removed from the program, so the pins will not be in use – probably best to just leave them floating, they should’t be creating any noise as they aren’t in use. On the noise issue, it’s best to mount this in a metal box for shielding – there are HF signals being measured after all.
